Pumpkin Spice Overnight Oats

Ingredients (1 serving):

½ cup rolled oats

½ cup milk (any kind – almond, oat, cow’s, etc.)

¼ cup plain or vanilla yogurt

2 tbsp pumpkin purée

1 tbsp maple syrup (or honey)

½ tsp pumpkin spice
-
½ tsp vanilla extract (optional)
-
A pinch of salt
Toppings (optional but tasty!):

Chopped nuts (pecans or walnuts)

Granola
-
Sliced banana or apple
-
A sprinkle of cinnamon
🥣 Instructions:

In a jar or bowl, mix together the oats, milk, yogurt, pumpkin purée, maple syrup, pumpkin spice, vanilla, and salt.

Stir well to combine.

Cover and refrigerate overnight (or at least 4 hours).

In the morning, give it a good stir and add your favorite toppings.
