Pumpkin Spice Overnight Oats

Ingredients (1 serving):

  • ½ cup rolled oats

  • ½ cup milk (any kind – almond, oat, cow’s, etc.)

  • ¼ cup plain or vanilla yogurt

  • 2 tbsp pumpkin purée

  • 1 tbsp maple syrup (or honey)

  • ½ tsp pumpkin spice 

  • ½ tsp vanilla extract (optional)

  • A pinch of salt

Toppings (optional but tasty!):

  • Chopped nuts (pecans or walnuts)

  • Granola

  • Sliced banana or apple

  • A sprinkle of cinnamon


🥣 Instructions:

  1. In a jar or bowl, mix together the oats, milk, yogurt, pumpkin purée, maple syrup, pumpkin spice, vanilla, and salt.

  2. Stir well to combine.

  3. Cover and refrigerate overnight (or at least 4 hours).

  4. In the morning, give it a good stir and add your favorite toppings.
